About the Recipe
Yet another delicious recipe from Judith Jones's book The Pleasures of Cooking for One! This really could be a meal at any time of the day. I found a wonderful kale/Brussel sprout salad mix at Costco that I put on the side and it was the perfect decadent dinner.
Ingredients
About 1/2 cup of stale bread torn into pieces
1/4 cup milk
2 slices baked ham
a little soft butter
3 spears cooked asparagus
Salt
1 large egg
1/4 cup mixture of milk and cream or half-and-half
Pepper
A couple of torn fresh sage or basil leaves (optional)
1 generous tablespoon of grated cheese (Parmesan or aged Cheddar or Swiss)
Preparation
Preheat oven to 350 degrees.
Put the bread in a bowl with the 1/4 cup of milk and soak 5 minutes then squeeze through your fingers to dissolve the crumbs in the milk.
Place ham on bottom of single-portion buttered baking dish and lay the asparagus spears (cut in half) on the ham. Spread the soaked bread on top and salt lightly. Beat the egg with the milk/cream mixture, add a little salt and freshly ground pepper, and pour over the dish. Arrange optional herbs on top and sprinkle on the grated cheese.
Bake 25 minutes. Let settle for a few minutes when you take it out of the oven.
