This became my GO-TO side this summer. My favorite? These simple potatoes on the side of the perfect steak. But you can really use these in many ways - including for breakfast! They're so simple and easy to uplevel. Just take these basics and start playing with them.
My favorite thing is that I can make that entire bag and then just refrigerate them and use them as needed. Once they're boiled, you really have an amazing side in less than 10 minutes when you want them.
Ingredients
1 bag petite gold gourmet potatoes
olive oil
salt & pepper
Preparation
Rinse potatoes and put into a heavy sauce pan. Cover the potatoes with cold water and heat on high heat. Once water begins to boil, lower heat so the water is at a simmer. Simmer for 18 minutes and then drain water.
Let potatoes cool so they're cooler to touch. Place as many potatoes as you want for one serving on a toaster sheet or baking sheet. Take a fork and lightly mash each one so they break open. Drizzle olive oil and then salt and pepper them. Bake at 400 for about 5-7 minutes or until desired crispness.
Want to step it up? You can always infuse the olive oil by simmering some in saucepan with some mashed garlic and/or rosemary before you drizzle it on the potatoes and bake.
Put the remaining cooked potatoes in a container and refrigerate. Use potatoes in individual servings for up to 2 weeks.
